5-Step Easy White Bean Chili Recipe

If you’re craving something quick, warm, healthy, and hearty, this white bean chili checks all the boxes. It will be on the table in under 30 minutes and it’s the perfect way to use up leftover chicken, turkey, and vegetables.

This white bean chili recipe is especially useful for the colder months when germs are running rampant. It contains several foods for boosting immunity and fighting cold and flu season, such as coconut oil, oregano, bone broth, mushrooms, onions, and garlic.

What to Serve with White Bean Chili

One of the best things about making a chili recipe is the ingredients are merely guidelines and don’t have to be exact. You can serve this white bean chili with anything you’d like and make it entirely your own.

If your vegetables are on their last legs in your produce drawer, throw ’em in. Celery, kale, spinach, and fresh herbs like parsley and cilantro would all be tasty additions.

If you don’t have turkey on hand, you can make white chicken chili. You could also use beef, organic tofu, or an extra can of beans. The chicken bone broth in this white bean chili recipe can also be swapped for a regular broth or vegetable broth. We like to use bone broth for the added nutritional benefits of collagen.

Once your white bean chili is dished, top it off with fresh parsley and Monterey Jack cheese and watch it melt right in…Mmmm. You can also serve a whole grain sprouted bun or slice of sourdough bread on the side.

Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion chopped
  • 3 cloves garlic crushed
  • 1 (4-oz) can chopped green chili peppers
  • 8 ounces mushrooms sliced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 4 cups Kettle & Fire Chicken Bone Broth (2 cartons)
  • 4 cups cooked turkey diced
  • 2 (15-oz) cans white beans (great northern, cannellini or chickpea)
  • 1 cup shredded Monterey Jack cheese
  • Fresh parsley leaves for garnishing

Instructions

  1. Heat the oil in a large saucepan over medium heat.

  2. Add onion and garlic. Slowly cook until fragrant.

  3. Mix in the green chili peppers, mushroom, cumin, and oregano. Continue to cook and stir the mixture until tender, about 3 minutes.

  4. Add bone broth, turkey, and white beans. Simmer 15 minutes, stirring occasionally.

  5. Dish the chili. Add cheese and garnish with parsley leaves. Enjoy!

This recipe can also be made with cooked chicken.
