Savory Miso Oatmeal with Bone Broth, Egg, and Tofu

When you make breakfast oats, you probably reach for fresh and sweet ingredients, such as almond milk, berries, maple syrup, cinnamon, and banana. But that can be exciting for only so long, right? When it’s time for a change, we like to do the exact opposite and add savory ingredients to our oats instead.

Eggs, bone broth, shredded chicken, beef, tofu, lentils, sweet potatoes—even unexpected steamed vegetables—can make an addictive, comforting, protein-packed, savory oatmeal. Give this method a try, and you’ll wonder why you hadn’t tried it sooner. 

What Does Savory Oatmeal Go With?

At first, it might feel counterintuitive making a savory oatmeal. So how do you do it? We have a “formula” for making it perfectly every time. All you need are these three simple ingredients to make the base:

  1. Kettle & Fire Bone Broth (any flavor)
  2. Beaten eggs
  3. Oats

Once you’ve got these three ingredients ready to go, the topping options are endless. Raid your fridge and see what you can find. Don’t be shy to experiment with herbs and spices. Cumin, turmeric, black pepper, sea salt, garlic powder, onion powder, and basil can really help the flavors of the proteins and vegetables pop.

If you’re craving some extra brain power for a busy day ahead, you can also add a healthy fat topping, such as hemp hearts, flaxseed, chia seeds, sliced avocado, MCT oil, or chopped nuts.

Savory Miso Oatmeal

Ingredients

  • 1 cup Kettle & Fire Beef Bone Broth (any flavor)
  • 1/2 cup mirepoix (chopped onion, celery and carrots)
  • 1/2 cup tofu cut into cubes
  • 1/4 cup seaweed (optional)
  • 1 large egg beaten
  • 1/3 cup oats
  • 1 teaspoon miso paste

Instructions

  1. In a small saucepan, heat bone broth over high heat. Add mirepoix and tofu, bring to a boil.

  2. Stir in seaweed, followed by the beaten egg. Stir constantly for a few seconds or until the egg is spread out. Remove from heat.

  3. Stir in oats, cover, and let it sit for 5 minutes.

  4. In the meantime, dissolve miso paste in some hot water in a small bowl.

  5. Add the miso to the oatmeal. Taste and adjust flavor by adding more salt if desired.
