Buffalo Mac & Cheese

Combine the all-stars of the football food spread, Mac & Cheese and Buffalo Sauce, for the ultimate side dish that will have you touchdown dancing in the kitchen. This grain-free swap is double gut-friendly with the addition of amino acid-rich Kettle & Fire Chicken Cooking Broth.

Buffalo Mac & Cheese
Ingredients
- 1 lb organic chicken breast cut into 1-inch pieces
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 tbsp olive oil
- 2 cups Kettle & Fire Chicken Cooking Broth
- 1 cup grass-fed milk or non-dairy milk
- 2 cups short pasta of choice (grain-free pasta such as chickpea or lentil works well)
- 1/4 cup buffalo sauce
- 2 cups organic cheddar cheese divided
Instructions

In a bowl, season chicken pieces with garlic powder, salt, & pepper.

Heat olive oil in a large skillet over medium-high heat. Add chicken & cook until golden brown, about 5 minutes.

Reduce the heat to low and pour in the Kettle & Fire Chicken Cooking Broth and milk. Simmer until mixture begins to bubble. Add the noodles then let it simmer for about 10 minutes or until noodles are tender.

When noodles are tender, stir in the buffalo sauce and 1 cup of cheese. Stir until the sauce is creamy.

Transfer to an oven-safe baking dish and top with the additional cup of cheese. Broil until the cheese is melted.
